Fish Taco w/ Quick Slaw, Avocado Sauce and Green Rice

1/4 cup plus 1 tablespoon EVOO - Extra Virgin Olive Oil, plus additional for drizzling
2 jalapeƱo peppers, seeds removed and finely chopped
1 1/2 cups rice
3 cups vegetable stock, divided
4 firm white fish filets, such as Mahi Mahi (about 8 ounces each)
Zest and juice of 3 limes, divided
1 tablespoon grill seasoning
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 cup honey
2 tablespoons hot sauce
1/2 small head red cabbage, shredded
1 small red onion, very thinly sliced
3/4 pound baby spinach
1/2 cup cilantro leaves
2 ripe avocados
1/2 cup sour cream
1 clove garlic, grated
12 6 to 8-inch flour tortillas

Preheat broiler, grill or large, nonstick skillet – whichever you prefer.

Place a medium-size pot over medium-high heat with 1 turn of the pan of EVOO, about 1 tablespoon. Toss the jalapeƱos into the pan and cook until tender, 3-4 minutes. Add in the rice and cook about a minute (you’re toasting it, so it's ready when it starts to smell nutty). Add in 2 1/2 cups stock and bring up to a bubble. Turn the heat down to medium-low and simmer the rice until tender, about 20 minutes.

While the rice is working, season the fish filets on both sides with the lime zest, grill seasoning, cumin and coriander. Lightly drizzle some EVOO over the filets and cook: If you're broiling, the fish should take about 6 minutes to cook (3 minutes per side); if you're grilling, the filets should take about 8 minutes to cook (4 minutes per side); if you're cooking them on the stovetop, they should take about 8 minutes to cook (4 minutes per side). Once the fish is cooked, transfer the filets to a plate and cover them with aluminum foil until you're ready – just don't let them sit too long here!

Once you've got the fish cooking, prepare the quick slaw by mixing together the juice of 2 limes, honey, hot sauce, some salt and freshly ground black pepper in a large bowl. Whisk in the remaining 1/4 cup of EVOO. Add the cabbage and red onion, toss to combine and set aside.

Make the "green" part of the rice by pureeing together the baby spinach, cilantro and remaining vegetable stock (about 1/2 cup) in a food processor. Dump the mixture into a dish and reserve it until the rice is finished cooking. Rinse out the food processor bowl and make the avocado sauce by pureeing together the avocado, sour cream, garlic and the juice of the remaining lime. Season the sauce with salt and pepper and set aside.

When the rice has finished cooking, stir in the green sauce and transfer the rice to a serving bowl or platter.

Assemble the fish tacos by shredding the fish filets (each one should give you enough meat for 3 tacos) and place some meat into each tortilla. Top them off with a little of the quick slaw and some avocado sauce. Serve each person 3 tacos and some green rice, and enjoy!

Green Rice

Lots of Veggies and Really Yummy!

1/4 cup oil
1 tsp salt
2 cups uncooked rice
2/3 cups chopped green peppers
1 cup chopped green onions (about one bunch)
1/3 cup chopped fresh parsley
4 cups chicken broth
1/8 - 1/4 tsp crushed red pepper

Combine all ingredients in 2 quart casserole dish. Bake at 350 degrees for one hour. Fluff with a fork prior to serving!

Chicken and Rice Burritos

This is really simple but we all love it. Use leftover chicken and leftover rice and it only takes 10 minutes!

2 1/2 c. shredded chicken
1-2 c. cooked rice
1 3/4 c. water
1 package taco seasoning
1 8oz. can tomato sauce
1 large tomato diced
1/3 c. sliced green onions
8 burrito size tortillas

Optional extras
Shredded cheese
Guacamole
Sour cream
Salsa

Heat chicken, rice, water, taco seasoning, and tomato sauce until warm and thick. Add tomato and green onions. Spread desired amount and filling and extras on tortilla, roll up burrito style.

Wild Rice Salad with Dried Cherries

super easy, good and healthy.
1 package (6.2 oz.) fast cooking long-grain and wild rice mix (I’ve used brown and it’s just as good)
1 medium unpeeled apple, chopped (1 cup)
1 medium green bell pepper, chopped (1 cup)
1 medium stalk celery, chopped (1/2 cup)
½ c. dried cherries (I've used craisins)
2 T. soy sauce
2 T. water
2 t. sugar
2 t. cider vinegar
1/3 c. dry-roasted peanuts, toasted

Cook rice mix as directed on package – except omit butter. Let rice cool while you prepare the rest. I put spread it out in the serving dish. Let cool 10 to 12 minutes, stirring occasionally, until cool.
Mix apple, bell pepper, celery and cherries in large bowl.
Mix soy sauce, water, sugar and vinegar in small bowl until sugar is dissolved.
Add rice and soy sauce mixture to apple mixture.
Gently toss until coated. Add peanuts; gently toss.

Hawaiian Haystacks

This is so quick and easy to make. It's one of the recipes I keep in my back pocket for when we get home late from work and have to rush to something else we have going on as it takes less than 20 minutes to prepare. This recipe is the perfect size for two really hungry people, so adjust accordingly.

1 chicken breast
1 can cream of chicken soup
1/2 cup chicken broth
2 cups rice

Cook rice according to package directions. While that's cooking, cut up the chicken breast and cook in skillet sprayed with Pam. Once the chicken is cooked through, add soup and broth. Heat through. Pile sauce on rice with any combination of the following {I've starred my favorites}:

cheddar cheese*
lo mein noodles*
diced tomatoes*
pineapple tidbits*
slivered almonds
diced celery
chopped green onion
maraschino cherries
chopped green pepper
shredded coconut

Mulligatawny

Don't ask me how to pronounce it -- just trust me it's pretty good. We are freezing our behinds off here in Idaho this week so I've got a couple of soup recipes to add to the blog!

4 Tbsp butter (or 2 Tbsp EVOO)
1 onion, chopped
2 carrots, chopped
1 celery stalk, chopped
1 green pepper chopped
1 apple, cored, peeled & chopped (I used a gala -- but would use a granny smith in the future)
1 1/2 pounds of boneless skinless chicken breasts chopped
1/2 cup flour
2-3 tsp curry powder
5 cups chicken broth
1 can diced tomatoes, drained
salt & pepper to taste
hot cooked rice to serve soup over

Melt the butter, in a large pot over medium heat. Add the onions, carrots, celery, green pepper, apple and chicken and saute for about 15 minutes or until chicken is cooked. Turn heat to low.

In a small bowl mix together the flour and curry powder. Add the mixture to the pot, then stir and cook for 3-5 minutes. Add the chicken broth and tomatoes. Partially cover the pot and simmer the soup for about an hour, stirring occasionally. Add the salt and pepper to taste.

To serve, place about 1/4 cup of rice in a bowl and ladle the soup over the rice.

Cheesy Beans and Rice

1 cup uncooked brown rice
1 can (16 oz) kidney beans, rinsed and drained
1 large onion, chopped
1 can (14 1/2 oz) diced tomatoes & green chilies, undrained
2 teaspoons chili powder
1/4 teaspoon salt
1 1/4 cups shredded cheddar cheese, divided

Cook rice according to package directions. Remove from heat; stir in beans. In a nonstick skillet, saute onion in oil for 4-5 minutes or until tender. Stir in tomatoes, chili powder, and salt. Layer 1/2 rice mixture, 1/2 cup cheese, and 1/2 tomato mixture in a 2-qt baking dish coated with nonstick spray. Repeat layers. Cover and bake at 350 F for 30 minutes. Uncover, sprinkle with remaining cheese, and bake 5-10 minutes more until cheese is melted.

Green Chili Chicken

I made this on Sunday in the crockpot and it was really good. It was super easy to throw together in the morning and was ready when Matt got home. I'm sure you could cook it in the oven for an hour or so, too, if you prefer.

3-4 large chicken breasts
2 cans cream of chicken soup
4 oz can chopped green chilies
1 tsp cumin
1/2 tsp kosher salt
1/4 tsp pepper
1/4 tsp garlic herb blend seasoning (or plain garlic salt would work, too)

6 cups steamed rice
blue corn tortilla chips

Place chicken, soup, chiles, cumin, salt, pepper and garlic blend in crockpot. Cook on low for 6-8 hours. When done, shred chicken with two forks. Spoon over bowls of rice and garnish with crumbled blue corn tortilla chips.

Black Bean Fajitas

I've started blog-stalking the recipe blog of a girl in my ward. She has some great, healthy meals. This one was really tasty.

2 green bell peppers, cut into strips
1 onion, cut into strips
4 oz sliced mushrooms
1 cup frozen corn
1 can black beans, rinsed and drained
1 fajita seasoning packet + 1/4 cup water
2 cups cooked brown rice
guacamole
salsa, sour cream, and cheese if desired

Cook brown rice as directed. In a large skillet heat 1-2 Tbsp. olive oil and saute vegetables until tender crisp. Add black beans. Combine fajita seasoning mix with 1/4 cup of water. Add to cooked vegetables. Stir and cook until most of the liquid is absorbed.

Assemble however you like on the tortillas and enjoy! I think the next time I make these I might even just opt to eat them as a burrito bowl with a bit of extra rice!

Tortilla Soup

This is a recipe from my Mom and it's SO good! Make sure you have the avocado, cilantro and tomato - because that's what makes it GOOD! The soup alone isn't anything special - but when you add the toppings - YUMMY!

Cook together in oil for 2-3 minutes:
½ c. green onions
2 t. garlic

Add to below mixture:
3 c. cooked rice
1 ½ c. chicken – cut up
1 can chopped green chilies
6 c. chicken broth

Cook for 10 minutes.

Serve with lime juice, salt n pepper, tomatoes, cilantro, avocados and tortilla chips.

My Go To Meals

Howdy all,

We have a few go to meals, some which I do in the crock pot in the morning when I know I have a busy day ahead.

Creamy Chicken--You can just bake this for an hour or put it in the crock pot and cook all day. I take chicken breasts and 1-2 cans of Cream or Chicken or Mushroom (whatever I have) and throw them in the crock pot with a can full of water, sprinkle with salt, pepper, maybe some powdered Italian dressing mix, and let it cook. About 20 minutes before you are ready to eat, throw in a half a block of cream cheese or a whole block if you have many chicken breasts and 2 cans of soup. At this point I take my tongs and break up the chicken, it is so tender it just comes apart easy and then stir up the mixture with cream cheese and cook for about 20 more minutes. Once it is all ready, I either pour it over rice or mashed potatoes and open a can or corn or carrots or something for the side, or a salad. Its really creamy and yummy and so easy. If you do it in the oven, just cook it for 45-60 minutes and add the cream cheese with 20 minutes left.

We also do nachos a lot for go to meals, you can do them vegetarian and just open a can of black beans or whatever kind of bean you have (refried is great too), sprinkle them on tortilla chips that are spread out on a cookie sheet, top with your favorite toppings, we do cheese, sauteed onions, sometimes add chicken or beef, then pop them in a 325 oven for a few minutes until it is all melty and yum.

I like this because I can make twice as much as I need and then take a leftover breast and shred it for Barbecue Chicken Pizza the next day or add in some Frank's Red Sauce after you shred it and make a really yum Buffalo BBQ Chicken and serve it on a green salad with ranch, or a sandwich/wrap for a great little kick.

I agree on the omelets comment made before, they are cheap and easy and fast!

I also keep tomato soup and cheese on hand for tomato soup and drilled cheese sandwiches.

I also love to make chicken salad. I keep some cans of cooked chicken on the shelf from Sam's. They are quite good and great for quick meals. I can take a can or two of chicken and drain it, then add a can of chopped pineapple, 1/2-3/4 cup of Mayo (lite is okay), salt, and pepper and sometimes a little lemon juice. Throw that on some bread and its a great sandwich.

Another crock pot one is for soup. I take a couple of chicken breasts, about 6 cups of water, and a cup or so of dried Great White Northern Beans. I put them all in the crock pot with a medium sized can of chopped green chilis. Add spices, like cumin, Mrs. Dash, etc and just cook on high all day. There is no need to pre-soak the beans, just sort them, rinse them and put them in the crock pot. This make an easy and tasty White Bean Chicken Chili. I serve it with a dollup of sour cream and tortilla chips and shredded cheese.

Asian Lettus Wraps

Tastes like P.F. Chang's and Pei WeiMakes
4-6 servings

½ cup finely copped or shredded carrots
½ cup water
1 (16oz.) package of ground turkey
1 cup chopped mushrooms
3 garlic cloves, minced
2 tablespoons minced fresh ginger
1/3 cup teriyaki sauce
3 tablespoons creamy peanut butter
1 small can of water chestnuts diced
1 tablespoon sesame oil
1 tablespoon rice vinegar
¼ cup hoisen sauce (can be found with the oriental foods)
½ cup sliced green onions
1 head iceberg lettuce, separated into leaves

Cook carrots and ½ cup water in a sauce pan over high heat, stirring occasionally, 3 to 5 minutes or until carrots are softened and water is evaporated.

In a large skillet cook turkey over medium heat for about 5 minutes, stirring until turkey crumbles and is no longer pink. Add carrots, mushrooms, and next 8 ingredients. Increase heat to medium-high, and cook stirring constantly, 4 minutes. Add green onions, and cook, stirring constantly, 1 minute. Spoon mixture evenly onto lettuce leaves; roll up.

To go Meals: Southwest Chicken Casserole

This is the quickest, easiest casserole I've come across. It uses almost all pantry items and it's pretty tasty too! Hope you like it!

1 can chicken chunks, drained
1 can diced green chiles (approx 4oz)
1 can condensed cream of mushroom soup
2 cups shredded cheese (chedder or mexican blend)
2 Tbsp dried minced onion
salt and pepper to taste
1 1/4 cups water
2 cups instant rice

I just mix all of the ingredients in a microwave safe casserole dish, approx. 9X13", adding the rice last. The mixture is about the consistency of soupy pancake batter. Cover the dish and microwave for about 15 minutes. All done!!!

Sweet Potato and Black Bean Burritos


This recipe is from a family friend...who is the healthiest eater that I know. Sounds like a crazy combination, but they're awesome together and amazingly healthy... which makes them even better to me. I added some cheese on top before I baked them. And then topped with some guacamole.

3 cup peeled, cubed sweet potatoes
½ teaspoon salt
2 teaspoon vegetable oil
3 ½ cup diced onions
4 large garlic cloves, minced
1 tablespoon minced fresh green chile
4 teaspoon ground cumin
4 teaspoon ground coriander

4 ½ cup cooked black beans (3 - 15oz cans)
2/3 cup lightly packed cilantro leaves
2 tablespoons fresh lemon juice
1 teaspoon salt
8 tortillas
Fresh Salsa
{I topped with 1/4 c. pepper jack cheese before I baked them}
Guacamole/Avocado {I did this instead of the salsa}



Heat the oven to 350 degrees.

Sweet potatoes in medium saucepan with the salt and water to cover. Cover & bring to boil, simmer till tender, roughly 10 minutes. Drain, set aside.

While these cook, warm the oil in a skillet and add onions, garlic, and chile. Cover, cook on med-low, stirring a bit, for about 5-8 minutes. Add cumin, coriander and cook for 3 minutes more, stirring frequently. Remove from heat and set aside.

In food processor add black beans, cilantro, lemon juice, salt, and cooked sweet potatoes; puree until smooth. Transfer mixture to a large bowl, and mix in cooked onions and spices.

Put your burritos together, and then put them seam side down in a lightly oiled baking dish or tray, and cover with foil, bake for 30 minutes. Serve with Salsa.

Salmon Bake with Pecan Crunch Coating

3 tablespoons Dijon mustard
3 tablespoons butter, melted
5 teaspoons honey
1/2 cup fresh bread crumbs
1/2 cup finely chopped pecans
3 teaspoons chopped fresh parsley
6 (4 ounce) fillets salmon
salt and pepper to taste
6 lemon wedges

1. Preheat the oven to 400 degrees F (200 degrees C). In a small bowl, mix together the mustard, butter, and honey. In another bowl, mix together the bread crumbs, pecans, and parsley.

2. Season each salmon fillet with salt and pepper. Place on a lightly greased baking sheet. Brush with mustard-honey mixture. Cover the top of each fillet with bread crumb mixture.

3. Bake for 10 minutes per inch of thickness, measured at thickest part, or until salmon just flakes when tested with a fork. Serve garnished with lemon wedges.

I served with brown rice and Pancetta Sauteed Haricot Vert with Cherry Tomatoes and Feta from Picky Palate. {though I used regular green beans, sun-dried tomatoes because that's what I had - yummy!}

Mean Green Tortilla Soup

This is a lot like my Mom's tortilla soup that I posted a while back... but Rachael Ray adds tomatillos to it... and I loved it!! It makes it greener, tangier and more flavorful. Next time I think I'll add some rice like in my Mom's recipe.

2 cups chicken stock
2 cups water
3 ears of corn, kernels removed (reserve shaved corn cobs)
1 package corn tortillas, cut into strips
4 tablespoons EVOO – Extra Virgin Olive Oil, divided
1 package (3 pieces) chicken thighs or breasts
1 onion, chopped
2 garlic cloves, grated
2 teaspoon cumin
1 jalapeƱo pepper, seeded and chopped
10 to 12 tomatillos, husks removed
2 cups cilantro, chopped
Zest and juice of 2 limes
2 cups jack cheese, shredded
3 avocados, chopped (optional)
{1 pint cherry tomatoes, quartered lengthwise - I added}

Preheat oven 400°F.

In a large pot, bring the chicken stock and water to a bubble with the reserved corn cobs and let simmer for about 10 minutes.

Place the corn tortilla strips onto a baking sheet and spray them with some cooking spray. Transfer to the oven and bake until crispy, 10 minutes.

Preheat a skillet over medium-high heat with some EVOO about 2 turns around the pan. Add the chicken, browning on all sides, then place into the oven for about 7-8 minutes, until juices run clear and no pink remains in the center. Once the chicken is done cooking, remove from oven and let rest before cutting into strips.

Preheat a heavy-bottomed pot with remaining 2 tablespoons of EVOO. Add the onion, garlic and cumin, and cook till soft, about 3-4 minutes. Add the corn kernels along with the jalapeƱo.

While the veggies are cooking, puree the tomatillos in a food processor until somewhat smooth. Add the purƩe, stock and chicken to the pot along with the veggies.

Simmer for 10-15 minutes. Remove the soup from the heat and add in the cilantro, lime zest and juice, and serve it up garnished with a big handful of jack cheese, tortilla and avocado.

Sweet and Sour Pork (or Chicken)

Dip chunks of pork (or chicken) in egg, then in a mixture of 1c. flour and 1 tsp. baking powder. Cook in oil.

Add:
2 c Ketchup
1/4 c vinegar
3/4 c sugar
chopped onion
2 chopped green peppers
1 can pineapple tidbits w/ juice

Steam until vegetables are tender. In needed thicken with cornstarch (I never do). Serve over rice.

*I never do the egg, flour step. I just brown the meat in oil. It saves a little time, and still is REALLY good!

Cranberry Pork Roast

I can't take credit for this yummy dish (Thanks Michelle), but it is dang tasty!

Cranberry Pork Roast

2-3 lbs. boneless rolled pork loin
1 can jellied cranberry sauce
1 cup sugar
1 cup cranberry juice

1 tsp dry mustard
2 T corn starch
2 T cold water

Place pork loin in crock pot. In bowl, mash cranberry sauce, sugar, juice and mustard. Pour over pork. Cover and cook on low for 6 to 8 hours or until meat is tender.
After pork is cooked, measure 2 cups of liquid, heat and add combined cornstarch and water. Cook until thickened. Season with a little salt. Serve with meat. (This is great with mashed potatoes!!)

Simple BBQ Sauce (Amy)

2 cups ketchup
1 cup brown sugar
1 medium onion sliced
½ tsp chili powder
¼ tsp cayenne pepper
¼ tsp paprika
½ tsp salt

Mix all together. Pour over 4 to 8 chicken breasts in a crock pot. Cook for 6 hours on low. Serve over rice or shred the meat and serve as BBQ chicken sandwiches. (This is also fantastic with pork, I use the shoulder, and served with Hawaiian rolls)


Three Bean and Pork Crock Pot Chili (Amy)

1 chopped onion
2 medium garlic cloves, minced
1 cup carrots, chopped
1 tablespoon chili powder, medium-hot
1 tsp dried oregano
1 chipotle pepper in adobo sauce, chopped
½ teaspoon table salt
½ teaspoon black pepper
2 pounds lean pork tenderloin, cut into 1-inch chunks
15 oz canned black beans, drained and rinsed
15 oz canned kidney beans, drained and rinsed
15 oz canned pinto beans, drained and rinsed
29 oz canned diced tomatoes, with green pepper, celery and onion, undrained
6 oz canned tomato paste

Combine onion, garlic, carrots, chili powder, oregano, chilies, salt and pepper in a 5-quart (or larger) slow cooker. Stir. Add remaining ingredients. Stir again. Cover and cook at HIGH setting for 6 to 8 hours. Yields about 1 cup per serving. (Note: Start the chili at a HIGH setting so the ingredients quickly reach a safe temperature. You can reduce the heat to LOW after 3 to 4 hours, if you prefer.)

Ribs (Emily)

Sprinkle with salt & pepper and then put them on a rack under the broiler for 4 to 5 minutes on each side (so they’re browned.) Put them in a crock pot and slather them with whatever BBQ sauce you like and let them cook all day. If you have 9 hours, start them on high heat for the first 3 or 4 hours, then reduce to low heat for the remaining time. If you only have 6 hours, cook them on high heat the entire time. Turn the pieces a couple of times in the crock pot.


Pot Roast

1 3 lb boneless chuck roast
1 tsp salt
¼ tsp pepper
¼ tsp garlic powder
1 onion, thinly sliced
3 bay leaves
3 or 4 beef bullion cubes, crushed
2 garlic cloves, crushed
1 (10 ¾ ounce) can condensed cream of mushroom soup
½ cup Chardonnay

Sprinkle roast on all sides with salt, pepper and garlic powder. Using a skillet over high heat, sear roast until brown in oil. Place roast in a crock pot and layer onions, bay leaves, crushed bullion cubes, garlic and cream of mushroom soup. Add the Chardonnay and cover with enough water to cover all the ingredients. Cook on low setting for 8 hours.

Asian Steak Tacos with Spicy Mushroom Salsa

When I saw these in my bon appetit magazine I seriously drooled onto the page... I kid you not. I made them, and they totally lived up to each salivatory drop. Only next time I'll make a few changes to appease mine and my husband's taste buds.

ASIAN STEAK TACOS
6 tablespoons olive oil
1/4 cup soy sauce
2 tablespoons honey
2 tablespoons fresh lime juice
4 garlic cloves, minced
1 tablespoon ground ginger
1 teaspoon lemon peel
1 teaspoon Sicilian sea salt
2 pounds skirt steak, trimmed
8 flour tortillas (6 inch)

SPICY MUSHROOM SALSA
1 tablespoon olive oil
1/2 pound shiitake or crimini mushrooms, sliced (about 3 cups)
2 large shallots, sliced into rings
1 teaspoon chipotle chile pepper {I'll use 1/2 t. next time, too spicy for me}
2 tablespoons chopped green onion
1 tablespoon chopped fresh cilantro
1 tablespoon rice vinegar
1 tablespoon sesame oil {I'll use 1/2 T. next time, it overpowered the natural shroom taste}
1 tablespoon toasted sesame seed
1/4 teaspoon Sicilian sea salt

Mix oil, soy sauce, honey, lime juice, garlic, ginger, lemon peel and sea salt in a small bowl until well blended. Place steak in a glass dish. Rub seasoning mixture all over steak. Cover. Refrigerate 1 hour, or longer for extra flavor.

Meanwhile, for the Salsa, heat oil in large skillet on high heat. Add mushrooms; cook and stir 4 minutes or until golden brown. Add shallots and chipotle chile pepper; cook and stir 3 minutes or until shallots begin to brown. Spoon mushroom mixture into a medium bowl. Add remaining ingredients; toss lightly. Set aside.

Grill steak on medium-high heat 3 to 4 minutes per side or until medium-rare doneness. Remove steak to cutting board. Let stand 5 to 10 minutes before slicing.

To serve, slice steak across the grain into thin slices. Serve in warmed flour tortillas topped with Spicy Mushroom Salsa.
