To go Meals: Southwest Chicken Casserole

This is the quickest, easiest casserole I've come across. It uses almost all pantry items and it's pretty tasty too! Hope you like it!

1 can chicken chunks, drained
1 can diced green chiles (approx 4oz)
1 can condensed cream of mushroom soup
2 cups shredded cheese (chedder or mexican blend)
2 Tbsp dried minced onion
salt and pepper to taste
1 1/4 cups water
2 cups instant rice

I just mix all of the ingredients in a microwave safe casserole dish, approx. 9X13", adding the rice last. The mixture is about the consistency of soupy pancake batter. Cover the dish and microwave for about 15 minutes. All done!!!

Breakfast Casserole

Here is the Breakfast Casserole recipe that I made for a Sunday lunch (for picture see picture with German Pancakes). It is adapted from a recipe in our ward cookbook.

1 large bag of hash browns (although I bought a large bag and didn't use the whole thing)
1/2 onion chopped (You can add onions or buy hash browns with onions)
12 eggs
1-2 cups of grated cheese
Meat of choice: 8 oz of cooked breakfast sausage crumbled or 1 cup of cooked chopped up ham or
1 pound of bacon cooked and crumbled (I used ham)
1/2 tsp salt
1/2 garlic salt
Pepper to taste

Pour frozen hash brown in greased 9X13 pan. place meat in a layer on top of hash browns. In a large bowl beat eggs with a whisk and add 1/2 tsp of salt, 1/2 tsp of garlic salt, and pepper. Pour egg mixture on to hash browns and meat. Top with cheese. You can now refrigerate overnight if you want to eat it for breakfast or go ahead and bake it now. Bake at 425 for 20 minutes, turn oven down to 375 and bake 20 minutes longer.

Zuchini Stuffing Casserole

2 lbs zucchini or yellow summer squash diced (about 7 cups)
1/4 c. chopped onion
1 can (10.5 oz) cream of chicken soup
8 oz. carton sour cream
1 c. shredded carrots
2 c. cooked, diced chicken
1 box stuffing mix according to directions

In large pan of boiling water cook zuchini and onion for 5-10 minutes or until crisp-tender.

In a large bowl combine soup, sour cream, chicken and carrots. Fold in zucchini and onions.

Spread half of stuffing in bottom of pan. Add zucchini mixture and then remaining stuffing. Bake at 350 for 25 minutes or until heated through.

Swiss Chicken

12-16 chicken tenders
1 pound shredded Swiss cheese
2 cans cream of mushroom soup
1 ½ cups milk (or a little more than that won’t hurt)

Place chicken in greased 9x13 casserole dish. Cover with all cheese. Pour mixture of soup and milk over top. Take 1/3 package of Pepperidge Farm Herb Season crumbs and sprinkle on top. Sprinkle ¼ cube melted butter over top. Bake at 325* for 2 hours.

Serve with baked potatoes, sour cream, cranberry sauce, salad, rolls…

This is a Sunday dinner favorite. It is very easy and tastes like you've slaved for hours.

Lattice-top Chicken

This is another recipe of Michelle's. (If she's not going to join and post her recipes, the rest of us will just do it for her!) She has great recipes and the leftovers are always perfect to take for lunch the next day.

2 cans potato soup
1 cup milk
½ tsp salt
2 cups cooked chicken, cubed
1 cup cheddar cheese
1 cup Durkee’s onions
1 pkg crescent rolls

Mix soup, milk, salt, chicken, ½ cup cheese, and ½ cup onion rings. Pour into greased 9x13 pan. Cover with foil. Bake at 375 for 20 minutes until bubbling. Press out crescent rolls and pinch where perforated. Slice rolls and place in lattice-top design. Bake 15 more minutes, uncovered. Sprinkle on remaining cheese and onions. Bake another 5 minutes.

Rice Casserole

Such a great idea Mand!!! This recipe is so easy and it definitely was a house favorite!

Ingredients:

1 lb ground beef
1 can tomato soup
1 can cream of mushroom soup (or cream of anything)
2 Cups of rice
Cheese

Cook the rice and set aside. Fry the ground beef and season to your liking. Mix the soups in with the ground beef and bring to a boil. Then mix all this together in a casserole dish and top with cheese. Place it in the oven on broil until the cheese is melted and golden and then enjoy! If you really like cheese, try putting a layer of cheese in the middle as well! And it also tastes great with Niblets!
