A little bit of work, but well worth the effort! I double this recipe and it makes 4 potpies in an 8" square foil pan that freeze very well!
Pie Crust
2 1/2 cups flour
1 tsp salt
1 tsp sugar
2 sticks butter (unsalted)
4-10 Tbsp ice water -- add water by the Tbsp until it is pie crust consistency (The amount fluctuates depending on the temp and consistency of your butter.)
Filling
2 1/2 cups cooked cubed chicken (or turkey)
2 cups fresh/frozen peas
1/4 cup chopped onion
3 large carrots sliced
2 med/large potatoes peeled, cubed and parboiled
White Sauce
6 Tbsp butter
6 Tbsp flour
2 cup half-half
1 cup chicken broth
1 tsp salt
1 tsp pepper
Instructions:
Roll out 2/3 of pie dough and place in the bottom of two 8" square foil pans. (Save 1/3 for the tops of the pies.) Make white sauce in sauce pan by melting butter and stirring in flour with a whisk until smooth and bubbly. Whisk in half-half, chicken broth, salt & pepper. Continue cooking, stirring occasionally until sauce thickens. Stir hot sauce into a large bowl with the remaining filling ingredients. Pour filling ingredients into pie crust. Roll out remaining pie crust and place on top of filling. Flute edges to seal. Make three small slits in the top of the crust and lightly brush with milk. Bake for 50-60 minutes at 375 degrees.
These freeze REALLY well. However, they must be THAWED before baking. I will usually pull mine out a day ahead of time and put in the fridge. . . . Enjoy!

Iced Carrot Cookies
I got this recipe from the Lion House Classics recipe book. It turned out great!
1 cup shortening
¾ cup sugar
2 eggs
1 cup cooked, mashed carrots
2 cups flour
2 teaspoons baking powder
½ teaspoon salt
¾ cup coconut
In large mixing bowl, cream shortening and sugar. Add eggs; beat until fluffy. Add mashed carrots. Sift flour, baking powder, and salt; add to creamed mixture. Stir in coconut. Drop by teaspoonfuls onto greased cookie sheet. Bake at 400 degrees for 10 minutes. Cool, then ice with Orange Frosting (below). Makes 4 dozen small cookies.
Orange Frosting
1 tablespoon orange juice
2 teaspoons grated orange peel
1 cup powdered sugar
2 tablespoons soft margarine
In small bowl, combine all ingredients; stir until well mixed.

Roasted Baby Carrots
These are too yummy and just perfect for fall.
Note: "Baby Carrots" do not mean the little carrot nubs that I give to my kids for a snack. These are the baby carrots that are 5-6 inches long and most of the time still have the greens attached. I picked mine up at the farmer's market!
1 1/2 lbs of 5 inch long baby carrots, carefully washed,
greens cropped to 1 inch above top of carrot
1 red onion, peeled, cut into 8 wedges
2 Tbsp olive oil
1 Tbsp fresh chopped rosemary, or 1 teaspoon of dried rosemary
Garlic powder
Salt and pepper
1 Preheat oven to 400°F. Gently toss together the carrots, red onion, rosemary to coat with the olive oil. Lay out on a rimmed baking pan. Sprinkle with garlic powder, salt, and pepper.
2 Roast for 30 to 40 minutes on middle rack or bottom rack, until well browned.
Serves 4.

Company Carrots
Well Mandy- better late than never! Here is a side dish recipie for you, you have probably had it before at Thanksgiving or somthing! I know your sister love it.
2 1/2 lb baby carrots
1/4 liquid from carrots
1/2 c mayo
1 TB horseradish
1 Tb minced parsley
salt and pepper to taste
1/2 c cracker crumbs
3 TB marge melted
Cook carrots, save liquid. In a bowl combine liquid, mayo. horseradish, parsley, salt and pepper,
add carrots and coat well. Mix marge with cracker crumbs and spread over the top of carrots. Cook at 375 until crumbs brown and it is heated through. about 15 minutes.

Glazed Carrots
Here's a vegetable side dish for you Mandy. It's super easy.
Boil carrots until tender. Drain. Add butter and brown sugar to taste (about 1 T. each).

Carrot Cookies
Hey, don't skip past this recipe because it combines carrots and cookies!!! These are really scrumptious and the orange icing makes them irresistible!
Ingredients:
1 cup shortening
3/4 cup sugar
1 cup mashed cooked carrots
1 egg, slightly beaten
1/2 tsp lemon juice
1 tsp vanilla flavoring
2 tsp baking pwd
1/2 tsp salt
2 cups flour
Cream shortening and sugar. Add carrots, egg, lemon juice and vanilla. Sift (I never really sift, but if you want to you can . . .) flour with baking pwd and salt. Add to creamed mixture. Drop by spoonfuls onto greased cookie sheets. Bake at 350 until light brown (very light brown).
Icing:
Juice of one orange
Grated rind from orange
Enough powdered sugar to make spreading consistency
Spread on HOT cookies. These freeze well . . . Enjoy!
